Agrigio Grano Arso
Siconolfi Generoso, better known as Giogiò, was born in the United States in Newark (N.J.), the son of immigrant parents. In the 1960’s they all returned to Puglia to farm the family land. Eventually Giogio took over the operation, focusing on growing and processing high quality organic chickpeas. He grew amazing legacy versions, and eventually began to turn the chickpeas into flour used for baking, which he also did. Of course the big guys discovered the potential for chickpeas, and soon his neighbors were all growing run of the mill varietals for the large wholesalers. While he has not forgotten chickpeas, Giogiò now focuses on the production of organic Senatore Capelli wheat and the pasta and baked goods he makes from the flour. He uses only wheat that he or his immediate neighbors grow. It is milled in a 200 year old mill on the property, using natural stones. We have had several grano arso producers in the past, and Giogiò is the finest we have found.
