There are many reasons why half of the 3-Star Michelin restaurants in Italy and many U.S. restaurants famous for their own house-made pasta also serve Mancini to their guests. The Mancini family produces top-quality pasta from wheat grown on their own fields in Le Marche, central Italy. They have worked this land for three generations. The pasta is produced in a small custom-designed factory in the middle of the fields providing total quality control start to finish. Bronze dies are used for all the pasta shapes they produce. The pasta dries slowly at gentle temperatures, so it retains its wheat flavor and nutrients. A favorite of top restaurants world-wide. The Mancini line includes I Turanici spaghetti made with Turanicum, an ancient, almost forgotten wheat from the Khorasan region which has gluten that is very soft and easily digestible. On the palate it produces a clean cereal flavor, with soft and chewy qualities.
