Salsa di Pomodoro Ciliegino

Tomatoes, olive oil, salt and basil.  That’s all it takes to make tomato sauce.  But to make one as wonderful as Viragi, it takes a special Sicilian tomato known as pomorodino cillieggino (cherry tomato), world class DOP Extra Virgin Olive Oil, and a producer who understands how to combine 21st century production methods with a long family tradition of creating the flavorful and natural products that Sicily is famous for.  Made in the small town of Chiaramonte Gulfi not far from Ragusa, the salsa is a bright red, slightly sweet puree of fresh tomatoes that will help create memorable dishes.  Originally available only in Sicily’s traditional crown-capped bottles, it now also comes in a modern 3 kg foil pack, perfect for the professional kitchen.  Some of our top restaurant customers take 10-15 cases a week, so Viragi must be doing something special here.
